I hope you all had a great weekend. We had a nice, relaxing one. We also had some really yummy food.
I have been pinning and pinning and pinning yummy recipes on Pinteres, but have not made many of them. I am sure I am not alone in this. ☺ I decided to try a few this weekend and it was yummmy!
We had Cilantro Thai Grilled Chicken from the Artsy Foodie, Cranberry Avacado salad for The Cafe Sucre Farine, and Icebox strawberry pie from Cook's Country. The chicken was very easy to prepare and was really good. It is a definite keeper. The salad was very yummy. I did not have almonds, but I did have candied pecans and it was still fantastic. And last, but certainly not least, was the strawberry pie. This pie uses 3 POUNDS of strawberries. I will warn that this pie is a little bit of work. You have to boil down two pounds of berries and then add additional ingredients and simmer more and then wait for it to cool and then add more berries and then chill the pie for at least 4 hours before eating. But is is worth the work and the waiting. It has a cream cheese whip cream topping that is so yummy. The Little Lady was helping me make the topping and asked what the milk stuff was, I replied, "Heavy whipping cream". As she sat at watched the mixer whisk it up, she was pretty excited and said, "The heavenly whipping cream looks so yummy." Yeah, that pretty much described it. I will admit I was not suprised at how good the pie was. I have come to trust the recipes from Cook's Country and have never been disappointed by them.
